Apple Pie Filling

Of all the pies out there, Apple Pie is one of my absolute favorites, topped only by pumpkin pie. I prefer Granny Smith apple for this recipe, but you can substitute other apples if you're looking for a sweeter flavor. You can prepare this filling ahead of time and freeze it for up to a month as long as it is in an air-tight container. Use this to top ice cream, waffles, fill pie shells, or make hand pies.
Ingredients
4 Granny Smith Apples
1/3 cup Brown Sugar
2 Tbsp. Butter
1 tsp. Cinnamon
5 Tbsp. Water, divided
1 Tbsp. Cornstarch
Preparation
Peel the apples.
You can either cut the apple into 1/4-inch slices or into 1/2-inch cubes.
Mix together cornstarch and 2 Tbsp. water.
Let's Get Cooking
Melt butter and cinnamon over medium heat.
Stir in apples, sugar, and the remaining 3 Tbsp. of water.
Cover and cook 4-5 minutes.
Slowly add the cornstarch/water mix.
Cook another 1-2 minutes, the apples should be tender but not mushy.
