Cajun Pasta

For those of you that like spice, this dish is perfect for you! This Cajun pasta has a nice heat to it and has a bunch of flavor. This is one of the dishes that I call "accidental dinner." These usually occur when I have no idea what to cook for dinner. My solution to this is usually to ask my husband to pick a protein. This particular night he chose chicken and all I had was the chicken, some noodles, and a bunch of spices. So I threw this together, having no idea how it would turn out. The first attempt was perfect for my husband and me, heavy of the spice. However, I know that not everyone enjoys the same level of spice, so I made it again cutting the amount of spice in half.
Ingredients
1 Tbsp Paprika
1/2 Tbsp Oregano
1/2 Tbsp Thyme
1/2 Tbsp Garlic Powder
2 Tbsp Cayenne Pepper
2 tsp Black Pepper
2 tsp Salt
1 Onion, Diced
16 oz Penne Pasta
2 Boneless, Skinless Chicken Breast, Diced
1/4 cup Cream Cheese
1 cup Chicken Broth
Let's Get Ragin' Cajun!
-Add all spices together.
-Set aside 1 to 2 Tbsp of seasoning mix.
-Toss chicken with the rest of the seasoning.
-Cook the chicken on medium-high until the outside gets some color (chicken does not have to be cooked through at this point of the process.
-Add onion and cook until tender (about 2 minutes).
-Add pasta and broth, bring to a boil.
-Lower heat to medium-low and simmer until pasta is done.
-Add the reserved seasoning and cream cheese.
-Stir until cream cheese is melted.
Have Fun with It!
