The problem with meatloaf is that sometimes it can dry out and become crumbly. For the longest time, I would remedy this by adding either water to my meatloaf. Which worked fine, but I always felt that this diluted the flavors I was looking for. So, I tried different things, looking for something to add both flavor and moisture. Then one day, I was visiting my father-in-law and he mentioned that he used to add pineapple to his meatloaf. He explained that the fruit not only added the necessary moisture, but also added a hint of sweetness.
So I took my own recipe for meatloaf, added pineapple to the loaf itself and mixed pineapple juice with Worcestershire sauce and ketchup.
Ingredients
1lbs Ground beef
1 onion
1 egg
1 cup Breadcrumbs
8 oz Pineapple chunks or tidbits, 1/2 cup juice reserved.
1/2 cup Ketchup
1 tsp Worcestershire sauce
Prep
Mix everything except the ketchup, 1/2 cup pineapple juice, and Worcestershire sauce until it holds together.
Bake at 350 for 30 minutes.
Mix remaining ingredients.
Spread ketchup mixture over the top of the loaf and bake an additional 15 minutes.
