Stuffed Tomatoes

When I was in school we made a similar recipe and after trying out the original recipe, there were things that I believed would make the dish better. So over the next couple months, I recreated the dish a couple times, trying something new until I landed on this recipe. The filling can be made ahead of time and the tomatoes don't take long to heat up once they are filled.
Stuffed Tomatoes
Ingredients
2 large Tomatoes, halved and scooped, tomato guts reserved
1/4 cup Onions, small dice
1/4 cup Celery, small dice
2 tsp. Garlic, minced
1 cup Bread crumbs
1/4 cup Cheddar Cheese
1/2 tsp. Basil
1/2 tsp. Thyme
Stock or milk as needed
1/4 cup Parmesan cheese
Salt and Pepper to taste
Preparation
Preheat oven to 350° F.
Sauté the onions, celery, and garlic.
Remove from the heat and add bread crumbs, cheddar cheese, spices, tomato guts, and enough stock or milk to combine.
Fill the tomatoes with the mixtures and bake until the filling is warm.
Sprinkle the Parmesan on top of the tomatoes and return to oven until cheese is melted.
