This is a family favorite during the fall and winter. Most often my aunt would make this for Thanksgiving or Christmas, and it would practically disappear. One day after school, she pulled me into the kitchen for one of our normal cooking lessons, except this evening lesson would stretch into the next day as well. This bread has a proofing time (The time it takes the dough to rise) of 12-18 hours.
This bread is cooked in a Dutch oven for a total of 45 minutes. My aunt never shaped her bread so when she made it, she would get some interesting shapes. I prefer the more shaped, or smoothed loaf shown above.
Ingredients
3 an 1/2 cup All-Purpose Flour
1 tsp Active Dry Yeast
1 tsp salt
1 and 1/2 cups Warm Water
It is very important that the water is nearly hot. You should barely be able to hold your hand under the water.
The Dough!
Mix together the ingredients together until the dough easily pulls away from the sides of the bowl.
Proofing!
Cover the dough with cheesecloth and let sit at room temperature for 12 to 18 hours.
Knead the dough. Spray the bottom of the Dutch oven.
Place dough in the pot and cover with the lid.
Bake it!
Preheat the oven to 450 degrees.
Bake bread for 30 minutes with the lid.
Remove the lid and bake an additional 15 minutes.
Store It!
Let the bread cool completely.
Wrap with plastic wrap and then with aluminum foil.
Store at room temperature.
