3 cups All-Purpose Flour
1 tsp. Salt
1/2 cup Cold Butter
1/2 cup Shortening
2/3 cup Ice Cold Water
1 egg
Ensure Everything is Cold when you Make this
It is crucial that your butter, shortening, and water are cold. I highly recommend putting your water in the fridge with ice in it.
This is the key to a nice flaky crust.
Mix the Dough
Whisk together the flour and salt.
Cut in cold butter and shortening until they are the size of peas.
You can use a knife if you don't have a pastry cutter.
Slowly add a tablespoon of water at a time until dough is moistened and holds together.
Roll it Out
Gently fold dough a couple times and split into two sections.
Roll the dough until its 1/8 inch and resemble two large rectangles.
Cut each rectangle into 4-to-5-inch sections.
Fill and Bake
Place about a tablespoon of filling on each section slightly off center for easy sealing.
Beat one egg.
Brush egg along edges of each section and fold.
Using a fork, gently press down were the edges overlap.
Bake for an hour or until dough golden brown.
