Roasted Pumpkin Seeds

The first time I had pumpkin seeds, they reminded me a lot of sunflower seeds which is one of my favorite snacks. Whenever I make anything from fresh pumpkins, I roast the seeds up for a tasty treat. You can season them with nearly any seasonings you desire. One of my favorite combinations is olive oil, Italian seasoning, and parmesan. Occasionally, as I did this time, I prefer to keep them simple and use only salt and pepper.

One of the most important things to keep in mind is that the pumpkin seeds become crispier when they are dry when you bake them.


 

Ingredients

  • Pumpkin Seeds

  • Salt

  • Pepper

  • Any additional seasonings you would like

  • Olive oil

Cleaning the seeds

Once you have cut the pumpkin in half, remove the seeds from the pumpkin and place them in a bowl of water.

Any pulp attached should sink to the bottom of the bowl while the seeds remain on top.

Boil then Roast

Remove the seeds from the water and boil in salted water.

Dry the seeds in paper towels well.

Toss in oil and seasonings.

Bake at 350 for 20-30 minutes.
