Southern-Style Tomato Pie

"What is that?"
I always get this question whenever I make these wonderful treats! Many people have never heard of this cheesy pie. Originally brought to Philadelphia from Southern Italy, but it is now, for the most part, a southern dish. The original tomato pie was made using a bread similar to focaccia, which a flat dimpled bread that is usually topped with garlic and rosemary.

The Southern-style tomato pie is made with a pie shell, tomatoes, and cheese. It takes 30 minutes to an hour to make, depending on how thick the tomatoes are cut and how many are in it.
Ingredients
1 Nine inch Pie shell
4-5 large Tomatoes
3 Tbs. Basil
3 Tbs. Oregano
2 Tbs. Salt
2 tsp. Pepper
1 Tbs. Garlic salt
8 ounces Cheddar Cheese
8 ounces Mozzarella Cheese
Mayo as needed
The Crust
Bake the pie crust at 375 for 7-8 minutes or until the edges just start turning light golden brown. Remove the pie from the oven and set aside.
The Filling
Cut the tomatoes into desired thickness.
Remember that the thicker the tomatoes are the long you will have to bake it later!
Layer your tomatoes into the baked pie shell. I recommend at least 3 complete layers for best results.
Mix salt, pepper, and spices together.
Sprinkle generously and evenly over tomatoes.
The Cheese
Mix both cheeses together.
Slowly mix in mayo until cheeses will hold together.
Cover tomatoes with the cheese mixture.
Bake It
Bake at 375 until the cheese starts to brown, around 25-30 minutes
Storage and Reheating
Pies will last for up to 7 days as long as they are covered in plastic wrap and refrigerated. To reheat the pies, cut the pie to your desired size and place on an oven-safe dish and bake 5 to 10 minutes or until warm.
