Egg Benedict

This recipe can be made with everything from bacon, salmon, and crabcakes, to avocado and spinach. The air-fried grit cakes combined with the poached eggs and creamy hollandaise sauce makes for a delicious breakfast.


Eggs Benedict


Ingredients

  • 1 batch Hollandaise

  • 1 cup Yellow Grits

  • 1 cup Heavy Cream

  • 1 and 1/2 cups Chicken Broth

  • 1/4 cup Cheddar

  • 6 (or more if desired) strips of bacon

  • 4 eggs

  • 1 Tbsp White Vinegar

Preparation


  1. In a medium saucepan, bring chicken broth to a boil.

  2. Add grits and cook for 7-10 minutes.

  3. Stir in heavy cream and cheese.

  4. Line small cookie sheet with aluminum foil and spread grits evenly over pan.

  5. Refrigerate overnight.

  6. Cut refrigerated grits into 2 inch by 2 inch squares.

  7. Cook bacon

  8. In a saucepan, boil 3 cups of water and the vinegar.

  9. Stir the water and add one egg while water is still swirling.

  10. Remove egg after 2-4 minutes and repeat with other eggs.

  11. Typical arrangement of benedicts is the grit cake, protein, egg, then hollandaise is poured over the top.
